Vegetarian Chili
| 1 | 12 ounce package Frieda´s® Soyrizo™ meatless soy chorizo |
| 1 | tablespoon vegetable oil |
| 1 | medium onion, chopped |
| 1 | green bell pepper, seeded and chopped |
| 1 | 1.25 ounce packet chili seasoning |
| 1 | 14.5 ounce can diced tomatoes |
| 1 | 15 ounce can black beans or red kidney beans |
| 2 | cups frozen chuckwagon corn (or 1 15.25 ounce can fiesta corn, drained) |
Heat oil in a large, deep skillet or 3-quart saucepan over medium-high heat. Sauté onion and pepper 3 minutes. Squeeze Soyrizo™ from casing into pan with onion and pepper; break into small pieces with the edge of a cooking spoon and cook 5 more minutes.
Stir in chili seasoning; add tomatoes with juice. Bring to a boil; reduce heat to medium-low and simmer 10 minutes.
Rinse and drain beans. Stir beans and corn into chili; add 1 to 1 1/2 cups water until chili reaches desired taste and consistency. Simmer chili 5 more minutes, then ladle into bowls and serve hot.
