Asian Lettuce Wraps
Makes about 4 servings in 20 minutes
| 1 | tablespoon plus 1 teaspoon reduced-fat chunky peanut butter |
| 1 | teaspoon honey (optional) |
| 1 | teaspoon cider vinegar |
| 1 | teaspoon curry powder |
| 1/8 | teaspoon ground red pepper |
| 1 | teaspoon low-sodium soy sauce |
| 2 | cups preshredded coleslaw mix |
| 4 | thin slices deli-style turkey breast |
| 4 | leaves iceburg lettuce or napa cabbage |
Combine first six ingredients in a medium bowl; stir well. Add coleslaw mix and toss to coat. Place one slice of turkey on each lettuce leaf and top with coleslaw mixture. Roll up and secure each end with a wooden pick. Cut each wrap in half diagonally.
