Oatmeal Breakfast Cookies


2 c Flour
1 tsp Salt
1 tsp Baking soda
1 c Shortening (trans fat free)
1 c Sugar
1 c Brown sugar
2 Eggs
1 tsp Vanilla extract
1 c Oatmeal
2 c Special K or other cereal
1 c Chopped nuts and dried fruit

  1. Preheat oven to 375º. Grease cookie sheet.
  2. Mix dry ingredients and set aside.
  3. In mixing bowl, beat together, shortening, sugar, eggs and vanilla until light and creamy.
  4. Gradually blend in flour mixture.
  5. Stir in oatmeal and cereal, nuts and dried fruits.
  6. Drop by rounded spooonfuls onto greased cookie sheet.
    Bake 8-10 minutes. Let stand 2 minutes before removing from cookie sheet.
