Oatmeal Breakfast Cookies
| 2 c | Flour |
| 1 tsp | Salt |
| 1 tsp | Baking soda |
| 1 c | Shortening (trans fat free) |
| 1 c | Sugar |
| 1 c | Brown sugar |
| 2 | Eggs |
| 1 tsp | Vanilla extract |
| 1 c | Oatmeal |
| 2 c | Special K or other cereal |
| 1 c | Chopped nuts and dried fruit |
- Preheat oven to 375º. Grease cookie sheet.
- Mix dry ingredients and set aside.
- In mixing bowl, beat together, shortening, sugar, eggs and vanilla until light and creamy.
- Gradually blend in flour mixture.
- Stir in oatmeal and cereal, nuts and dried fruits.
- Drop by rounded spooonfuls onto greased cookie sheet.
Bake 8-10 minutes. Let stand 2 minutes before removing from cookie sheet.
