Make Ahead Lite Holiday Mashed Potatoes
| 10 | Large potatoes peeled and quartered |
| 1 cup ( 8 oz) | Fat-free or low-fat sour cream |
| 8 oz pkg. | Fat-free cream cheese |
| 6 Tbsp. | Low-fat butter substitute, divided |
| 2 Tbsp. | Dried minced onion |
| Salt To taste | |
| Paprika For garnish |
Cook potatoes till fork tender. Drain and
place in bowl. Mash with electric mixer. Add sour cream,
cream cheese and butter substitute (4 tablespoons), onion
and salt. Mix well.
Spread in a 9" x 13" baking dish
sprayed with PAM. Drizzle remaining butter substitute over
top. Refrigerate or bake immediately, covered, 40 minutes
at 350 degrees. Uncover. Bake an additional 20 minutes.
If refrigerated, let stand 30 minutes at room temperature
before baking.
