Low-Fat White Chocolate Macadamia Nut Chippers
| 2 cups | All-purpose flour |
| 1 tsp. | Baking soda |
| 1/2 tsp. | Salt |
| 1/4 cup | Butter (1/2 stick) |
| 1/2 cup | Sugar |
| 1/2 cup | Brown sugar, packed |
| 1/4 cup | Egg substitute |
| 1 tsp. | Vanilla extract |
| 1 Tbsp. | Milk |
| 1 Tbsp. | Corn Syrup |
| 1 cup | White chocolate chips (8 ounces) |
| 1/2 cup | Macadamia nuts, coarsely chopped |
| 1/4 cup | Coconut (optional) |
Preheat oven to 375 degrees.
Mix together the flour, baking soda and
salt. Set aside.
In a medium bowl, beat the butter and sugars together for 2 to 3 minutes. Add the egg substitute and beat for another 2 minutes. Blend in the vanilla, milk and corn syrup.
Add the flour mixture to the butter mixture and stir until
combined. Add the white chocolate chips, macadamia nuts
and coconut (if using), and stir until distributed evenly.
Drop by spoonfuls onto a cookie sheet, placing
2 inches apart. Flatten slightly with your fingers and bake
for approximately 10 to 12 minutes.
Makes 30 cookies. 128 calories and 5 grams
of fat per cookie
