Sirloin Stuffed Portabellos
| 1/2 lb. | Sirloin, cut into thin short strips |
| 4 | Portabello mushrooms, gills and stems removed |
| 1/2 Cup | Colby-Jack cheese, shredded |
| 1 Teaspoon | Cajun seasoning |
| 2 Tablespoon | Olive oil |
| 1 Tablespoon | Chopped parsley |
- Clean mushrooms and remove gills.
- Brush mushroom caps on both sides with olive oil and ½ tsp. of the seasoning.
- Chop stems and stir fry with sirloin until sirloin is no longer pink.
- Remove from heat. Add remaining seasoning and cheese.
- Spoon equal amounts into mushroom caps.
- Grill over medium hot coals for 5 minutes or until mushrooms are soft.
Each mushroom equals 4 servings at 57 calories per serving.
