Sirloin Stuffed Portabellos


1/2 lb. Sirloin, cut into thin short strips
4 Portabello mushrooms, gills and stems removed
1/2 Cup Colby-Jack cheese, shredded
1 Teaspoon Cajun seasoning
2 Tablespoon Olive oil
1 Tablespoon Chopped parsley

  • Clean mushrooms and remove gills.
  • Brush mushroom caps on both sides with olive oil and ½ tsp. of the seasoning.
  • Chop stems and stir fry with sirloin until sirloin is no longer pink.
  • Remove from heat. Add remaining seasoning and cheese.
  • Spoon equal amounts into mushroom caps.
  • Grill over medium hot coals for 5 minutes or until mushrooms are soft.

Each mushroom equals 4 servings at 57 calories per serving.
